Smokey Mac and Cheese Pasta
(Gleaned from the recipe on Knorr Pasta sides Chicken flavor)
Serves 2 hungry men…Or 3, if you add just a little extra to go with it…Snacks, anyone??? Or, a crowd fav would be the instant mashed taters…
4 slices thick cut bacon, cut into small squares (I doubled this from the recipe…After all, whoever has enough bacon???)
1 cup finely chopped yellow onion
1 cup finely chopped red bell pepper
1 package Knorr Pasta Sides Chicken flavor
½ cup shredded pepper jack cheese (or more, if you’re so inclined. Please, be more inclined! You won’t regret it!)
2 cups chicken, or…We use the prepackaged, already cut up chicken, which comes in a handy foil pack, from the isles of your local grocery store…Usually a 7 ounce size.

At Home: There are two ways to approach this, IMHO…Either buy from the store, the REAL DEAL bacon bits, like Oscar Mayer Real bacon bits, in a 3 oz. package, and you can indulge to your hearts content in the recipe. OR, you can cook up at LEAST 4 strips of thick cut bacon, then cut it up, and put it in a Zip-lock bag. Your choice. I’m confident you’ll do the right thing, and bring both…
Package carefully the onion and red pepper for safe transport, to cut up in the field. You do have a cutting board, right?
Cut off at least a ½ cup chunk of pepper jack cheese, and wrap it in plastic, then aluminum foil, and pack it deep in the bowels of your pack for safekeeping. This will usually last at least a day keeping it away from the heat of the sun, before using. We bring a cheap-O deluxe cheese grater with us to grate it on the trail, it keeps better this way.
In Camp: After dicing veggies, put the bacon and veggies together in the pan, with a little olive oil and simmer, Maybe 3 or 4 minutes, stirring frequently until the veggies are slightly soft, and then set aside in a separate container.
Then, using the same saucepan, prepare the noodles per directions (you saved the package, right?) then stir in the bacon/veggie mix with the cheese during the last couple minutes, and voila! Food to fight over!!!
